Apple butter Crostini
Slow cooker apple butter is so easy -- just apples, vinegar and spices. Best of all, no sugar so it's healthier. The classic combo of cheese and apples makes Apple Butter Crostini a tasty easy appetizer.
8 apples, peeled and cored*
1/2 cup Honey Ginger or Gravenstein Apple Balsamic Vinegar
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1/4 teaspoon ginger
1/4 teaspoon salt
Cut the apples in chunks. Place all ingredients in your slow cooker and cook on low for 8 hours. Break up the apples and whisk to make fairly smooth. Let cool and serve. This makes a great gift and freezes well.
Apple Butter Crostini
1 French baguette, cut in slices
3-plus tablespoons Rosemary Olive Oil
8 oz. cheddar, gouda or other cheese, sliced
1/2 cup Apple Butter
Fresh thyme leaves (optional)
Heat the oven to broil. Brush one side of the bread slices with the oil. Place on a parchment lined baking sheet. Place cheese slices on the bread making sure they don't reach the edges of the bread. You don't want it melting over the edges. Broil until the cheese begins to melt and the bread has crisped up a bit. Remove from the oven and let cool to room temperature. When ready to serve, spoon on some of the apple butter. Sprinkle with a few thyme leaves if you wish.
* Feel free to substitute up to 1/2 of the apples with peaches or pears.
