Buttery Baking Powder Biscuits

Biscuits are delicious, but  can be a bit time consuming and fussy.  We've taken out most of the work by using olive oil which allows us to mix, pat, cut and bake.  They're delicious with dinner or for mini sandwiches.


2 cups all purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 Butter Olive Oil or your choice

1/4 milk (I used almond)

1/2 cup Greek yogurt

Place parchment paper on a baking sheet.  Preheat oven to 450 degrees.

Mix the dry ingredients in a bowl.  Add in the olive oil, milk and yogurt and mix with a spoon until it makes a shaggy dough.  Then continue to mix by kneading with your hand in the bowl until the dough is fairly smooth.

Form the dough into 2 round disks.  Pat until just over 1/2 inch thick.  Cut each disk into six wedges.  Place on the baking sheet and bake for 10-12 minutes.  When done, place on a wire rack to cool a bit before serving.

Makes 12 biscuits.
