Blood Orange Coconut Fruit Salad

It was a surprise to me at how just a little bit of dressing can make a fruit salad rise to new heights.


1 cantaloupe

1 pineapple

1 carton of strawberries

2 cups of blueberries

Other fruits of your choice (optional)

1 tablespoon Blood Ornge Olive Oil

2 1/2 tablespoons Coconut or Blenheim Apricot Balsamic Vinegar

Thinly sliced mint or basil for garnish (optional)

Cut cantaloupe and pineaple in 1 inch cubes.  Slice (or quarter) strawberries.   Gently toss fruit.  Add the olive oil and vinegar and gently toss again.  Garnish with herbs of your choice.

Chill 1 hour before serving.
