Blueberry Goat Cheese Dip

Make the very best use of blueberries with this super-berry appetizer.


3 cups blueberries

6 tablespoons Blueberry Balsamic Vinegar

2 teaspoons lemon juice

1 teaspoon cinnamon

1 teaspoons finely minced rosemary (optional)

4 oz. cream cheese

8 oz. goat cheese or feta

2 teaspoons lemon juice (optional)

Combine the blueberries, Blueberry Balsamic, lemon juice, cinnamon and rosemary in a medium pot.  Bring to a simmer and cook until somewhat thickened, about 10-13 minutes depending on how juicy the berries might be.  Cool to room temperature.

In a food processor, combine the cheeses.  Taste to see if you need to add more lemon juice.

Spread the cheese on a serving plate.  Top with the blueberry sauce.  Serve with crackers or pita chips.
