Broccoli Apple Salad

Broccoli salad is always tasty, but the addition of apples and a zingy vinegar like Sicilian Lemon take it to new heights.  If your kids aren't wild about broccoli, cut back the amount by half and parboil it for 1 minute.  The sweetness of the apples, carrots and balsamic vinegar will disguise the broccoli pretty well.

4 cups broccoli florets

2 large firm apples, such as Gala, chopped

1 cup shredded carrots

1/3 cup chopped red onion

1/2 cup dried cranberries or raisins

1/2 cup pepitos, walnuts or pecans

1/2 cup Greek yogurt

1/2 cup mayonnaise

1/4 cup Sicilian Lemon, Key Lime or Honey Ginger Balsamic Vinegar

Rinse the broccoli and drain well.  In a large bowl, combine the broccoli, apples, carrots, onion, cranberries and all but 2 tablespoons of the pepitos.

In a small bowl, whisk the yogurt, mayo and vinegar.  Pour over the salad and toss.  Chill 1/2 hour.  

To serve, place in a serving bowl and sprinkle with the remaining pepitos.
