Caprese Salad Bowl
Farro is a wonderful, almost nutty-flavored, grain. Because it's a little uncommon, you can usually find it on the top shelf of the rice and grains section of your grocery store. Brown rice or quinoa would be a good substitute.
4 cups mixed salad greens
1/2 cup cooked farro*
1 cup cherry tomatoes, halved
3/4 cup diced mozzarella cubes
1 small ripe avocado, diced
1 1/2 tablespoons Basil or Unflavored Olive Oil
1 1/2 tablespoons Traditional or Balsamic of your choice
1/2 teaspoon Dijon or your favorite mustard
A few shreds of fresh basil
Cook the farro according to package directions. Place the salad greens in the bottom of the bowl and compose the farro, vegetables and cheese on the lettuce.
In a small container with a tight lid, combine the oil, balsamic vinegar and mustard and shake. Pour as much dressing on the salad as you wish.
Makes 1 salad.
