Choc Chip Cookies
Chocolate Chip Oatmeal Cranberry Cookies

These chewy cookies taste like breakfast in a cookie. Take several along for lunch for a quick pick-me-up.  Everyone I've shared them with has loved them.  You will, too.

1 cup Blood Orange Olive Oil

1 cup packed light brown sugar

2 eggs

1 tablespoon vanilla

1 cup flour

1/2 tablespoon baking soda

1/2 tablespoon salt

1 talespoon ground cinnamon

1 tablespoon grown nutmeg

4 cups oats (I used half rolled oats and half quick oats)

1/2 cup dried cranberries

3/4 cup mini semi-sweet chocolate chips

Preheat oven to 350 degrees.  In a large bowl, mix the oil, brown sugar, eggs and vanilla until well blended.  

In a separate bowl, combine the flour, baking soda, salt and spices.  Add the flour mixture to the wet ingredients and mix well.  Stir in the oats, cranberries and chocolate chips.

Mold the batter into rounded spoonfuls and place on a greased or parchment-lined baking sheet.  Bake 10-12 minutes.

Makes about 24 cookies.  This recipe can be halved or doubled.
