Easy Cilantro Lime Stir Fry
1 lb. pork loin chops or boneless chicken breasts, cut into thin strips
1 pkg. pork or chicken gravy mix (like McCormick or Knorr)
1 cup water
1 tablespoon Cilantro and Roasted Onion Olive Oil
1 tablespoon Key Lime Balsamic or fresh lime juice
2 tablespoon fresh cilantro, chopped
1 green onion, sliced
*hot pepper sauce, to taste
In a small bowl or measuring cup, whisk together gravy mix, water and balsamic (or lime juice). Set aside.
Heat olive oil in skillet, add meat strips and cook for about 6 minutes. stirring occasionally. Add the sauce to the skillet and stir until it comes to a boil. Reduce heat and simmer until the meat is thoroughly cooked, about 2-3 minutes. Stir in cilantro and green onion.
Serve over rice. (Try adding a tablespoon of Chipotle Olive Oil or Baklouti Green Chili Olive Oil when you cook your rice for a tasty, spicy kick!)
