coconut Lime Shrimp
So delicate, so tasty, and so easy.
1/4 cup Coconut Balsamic Vinegar
1/4 cup Persian Lime Olive Oil
1 tablespoons garlic, minced
1 chili, finely chopped
1 tablespoon cilantro, minced
1 tablespoon fresh lime juice
1 lb. large shrimp, cleaned and deveined
Salt and pepper, to taste
Preheat oven to 375. Combine balsamic vinegar, oil, chili, garlic, cilantro and lime juice in a dish. Marinate shrimp in mixture for 10-15 minutes; drain. Season with salt and pepper.
Lightly oil a baking dish and place shrimp in dish; bake for 5 minutes or until done. You may also place shrimp on pre-soaked skewers and grill for 1-2 min per side, or until done.
