Detox Tomato Turmeric Soup
It's called detox soup, but it's pretty delicious even if you're not trying to be healthy. Have plenty of crusty bread on hand for sopping up the juices.
2 tablespoons Unflavored or Basil Olive Oil
1 small onion, chopped
1-2 cloves garlic, grated
1 15 oz. can diced tomatoes
1 teaspoon dried basil
1-2 teaspoons turmeric
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup chicken stock
5 oz. cherry tomatoes, halved
1 tablespoon Honey Ginger or Traditional Balsamic Vinegar
A little fresh basil or dill
A couple of tablespoons seeds or chopped nuts
Heat the olive oil in a Dutch oven or larger pot. Add the onions and garlic; saute until softened over medium high heat, about 3-4 minutes.
Add the diced tomatoes and seasonings. Saute 2 minutes. Add the stock and cherry tomatoes; bring back to a simmer. Cover and reduce heat to medium low. Simmer 15 minutes.
Stir in the balsamic vinegar. Top with herbs and seeds.
Serves 3 as a main course or 4 as a soup course.
