

Creamsicle quick Bread
It really is amazing how much this bread tastes like a creamsicle. And what could be better.
Quick Bread
1 cup sugar
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/3 cup Blood Orange Olive Oil
Cream Cheese Filling (optional)
2 1/2 oz. cream cheese, softened
2 tablespoons sugar
1 egg
2 teaspoons flour
Topping Drizzle
1 cup confectioner's sugar
1 teaspoon Blood Orange Olive Oil
2-3 tablespoons orange juice or milk -- or just enough liquid to make a glaze
Preheat oven to 350 degrees. Grease 3 mini muffin pans or one 9x5 loaf pan (or muffin cups). Combine sugar, flour, baking powder and salt. In a separate bowl, beat eggs, milk and oil. Gradually add dry mixture to wet until just moist. Pour half the batter into the pans.
Combine the cream cheese filling in a small bowl with a whisk or fork. Spoon the filling over the batter in the pans. Top with the remaining batter. Bake 35-40 minutes (if using muffin cups, shorten cooking time -- bake til golden brown).
Cool bread in pans about 10 minutes. Slide a knife around the edges of the pans. Turn out loaves onto a cooling rack. When cool, combine the drizzle ingredients and drizzle over the loaves.
