This is a favorite dish of one of our employee's sons. And it's healthy, too.
3 tablespoons Unflavored Olive Oil
2 tablespoons peanut butter
1 tablespoon sesame seeds
7 tablespoons Honey Ginger Balsamic Vinegar
2 tablespoons honey
Pinch of salt and pepper
1 teaspoon Toasted Sesame Oil
Up to 1 teaspoon chili garlic sauce (optional)*
Juice of 1/2 of a lime (optional)
1 lb. Chinese noodles, curly or straight
4 oz. pea pods
1 red bell pepper, cut in juilienne strips
1 bunch green onions, cut on the bias
Place all the dressing ingredients in a bowl and whisk to blend. Taste, add lime juice if you wish. Set aside.
Slice the pea pods in half on the bias. Simmer in water for 30 seconds until bright green. Drain, rinse, and drain again. Break the noodles into chunks and cook according to package instructions. Rinse, drain and place in a large bowl. Add the pea pods, bell pepper and green onions. Pour on the dressing and toss. Sprinkle with extra sesame seeds if you wish.
This dish is good at room temperature or chilled.
*I like this sauce mild, but I hear it's good spiced up with the chili sauce. Haven't tried it myself. I do love adding the lime juice.
