French Chicken SAlad
This lovely chicken salad is highlighted with tarragon and our Elderflower Balsamic Vinegar, which brings out the flavor of all the ingredients. Tarragon is wonderful herb if used in moderation. Here, it's perfect.
1 1/2 - 2 lbs. leftover cooked or rotisserie chicken breast, diced or shredded
2 medium stalks celery, diced
1 1/2 cups grapes, halved
1/4 cup red onion, minced
1/2 cup Greek yogurt or mayonnaise
1/4 cup Elderflower Balsamic Vinegar
1/2 teaspoon Dijon mustard
1/2 - 3/4 teaspoon dried or 2 teaspoons fresh tarragon
1/4 cup sliced almonds (optional)
Salt and pepper to taste
Place the chicken, celery, grapes, red onion, and almonds if using in a medium bowl.
In a small container, whisk the yogurt, balsamic vinegar, mustard and tarragon. Pour over the chicken and combine. Chill one hour.
Serve on a bed of mixed greens or in a croissant (my favorite way).
