Brownie & Fruit Pizza

1 box brownie mix (or use your own brownie recipe)

1/3-1/2 cup Emerald Coast Olive Oil Blood Orange Olive Oil

1-2 eggs


Parchment paper

Fruit (we've used berries here, but mangos and kiwis are good too)

Whipped cream such as Redi-Whip (or cream cheese frosting)

Each brand of brownie mix requires different amounts of oil, eggs and water, so follow the directions to make the batter on the package.  However, substitute the Blood Orange Olive Oil for the recipe's vegetable oil (or you can use unflavored or Chipotle olive oil).

Place the parchment paper on a baking sheet and pour the batter onto the parchment.  The parchment will keep the brownie mix from spreading too much.  Bake the brownie base for about 20 minutes or until the brownie is well set 2 inches from the edge and the center is no longer liquid.  Let cool completely, then chill for at least 1/3 hour.

Spread brownie base with a 1/2 inch layer of whipped cream and arrange the fruit.  The pipe ripples of whipped cream for the white stripes.  Chill until ready to serve.  This cuts well with a pizza wheel.

(You can substitute a cream cheese frosting if you want to have it at room temperature a bit longer before serving.)
