These tasty sandwiches are served open-faced, but if you're in a hurry, make them into sandwiches and dive in. The Greeks use a great deal of olive oil, and this is a great example of how it's done. It's a delicious way to get your daily healthy polyphenols. Yum.
2 Sandwich Thins, split into tops and bottoms
2 medium tomatoes, grated and drained on a paper towel
2 oz. feta cheese, crumbled
3-4 tablespoons Unflavored Extra Virgin Olive Oil (grassy olive oils work best such as Koroneiki or Picual)
About 8 kalamata olives, sliced
Toast sandwich rounds. Drizzle with a little olive oil.
Top with drained tomato. Drizzle with oil.
Top with feta and olives. Drizzle again with olive oil. Serve.
