Green Chili Corn Bread

1 cup yellow or white corn meal

1 cup all-purpose flour

2 tablespoons sugar

4 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

1 egg, beaten

1/4 cup Butter (for mild) or Baklouti Green Chili (for spicy) Olive Oil

1 small can green chilies, well-drained

1 1/2 cups shredded cheddar cheese, divided

Preheat oven to 425° F. Spray an 8-inch square pan cooking spray.  In large bowl, combine corn meal, flour, sugar, baking powder and salt. Add milk, egg, oil, chilies and 1 cup cheese. Beat until fairly smooth, about 1 minute. Pour batter into prepared pan and bake in preheated oven for 20 to 23 minutes, or until wooden pick inserted in center comes out clean. 

 

Sprinkle the remaining cheese on top while still hot.  Wait a few minutes before cutting.
