Holiday Beans
with cranberries, Pecans & Feta

This dish is a great holiday dish.  You can prep the ingredients and then just cook briefly at the last minute.  It's fresh and flavorful with our Butter or Lemon Olive Oils.

1 1/2 lbs. fresh green beans

1/3 cup dried cranberries

1 teaspoon salt

1 1/2 tablespoons Butter or Lemon Olive Oil

1 clove garlic, grated

1/2 cup pecans

1 teaspoon lemon juice or Sicilian Lemon Balsamic Vinegar

1/3 cup crumbled feta

1/2 teaspoon lemon zest, optional

Trim and cut the beans into 1 1/2 inch pieces.  Soak the cranberries in hot water about 5 minutes; then drain.

Add the salt to a pot of water and bring to a boil.  Add the beans and simmer 3-5 minutes until crisp tender.  Drain, rinse briefly under cool water and drain again.  (You can prep to this point if finishing the dish later.)

To the pot, heat the oil to medium; add the garlic and saute a few seconds until fragrant.  Add the beans, pecans, cranberries and lemon juice; saute about a minute until heated through.  

Remove the pot from the heat and toss with the feta and zest, if using.  Serve.
