

Honey Balsamic Green Beans
Usually, I just drizzle some balsamic vinegar on my beans to dress them up. But for a more elegant dish, this honey balsamic dressing is very tasty and makes a great do-ahead cold bean dish. Very nice.
1/2 cup walnuts or pecans, chopped
1 1/2 lb. green beans, ends trimmed
1/4 cup Unflavored Olive Oil
2 teaspoons honey
1/2 teaspoon Dijon mustard
Pinch of salt and pepper
2 tablespoons Pinot Noir Wine Vinegar, Pomegranate Balsamic or Denissimo Balsamic
In a skillet, toast the walnuts or pecans just until golden. Set aside.
In the same skillet, bring 1/2 inch water to a boil and add the beans. Simmer 5-6 minutes, covered, until crisp-tender. Drain.
While the beans are cooking, combine the oil, honey, mustard, salt and pepper in a small container. Pour over the beans and add the nuts. Gently toss and refrigerate.
Serve.
