Irish Flag Salad
While this salad is meant to serve on St. Patrick's Day, it would be delicious any day -- particularly in winter since it uses winter fruit. Juicy oranges, smooth pears, feta and crunchy pistachios combine to make a very tasty salad.
4 handfuls of washed baby spinach
2 oranges, peeled and seeded
2 Bartlett pears, cored
1/2 cup crumbled feta
1/2 cup chopped pistachios
1/4 cup Blood Orange Olive Oil
1/4 cup Gravenstein Apple Balsamic Vinegar
Pinch of salt and pepper
Place a handful of spinach on each plate. Remove the pith from the orange (I use my kitchen scissors to clip off the back of each slice to remove the pith and then peel it off). Set aside.
Slice the pears in wedges. Place the oranges alternatively with the pears in a pinwheel on the spinach. Sprinkle with the feta and pistachios.
Combine the olive oil, vinegar, salt and pepper in a small container and shake. Drizzle as much dressing as you like on each salad.
