Lemon Berry Phyllo Cups

This is a super easy spur-of-the-moment dessert.  Have the kids help for even more fun.

1 cup Greek style yogurt (we use Fage)

3-4 tablespoons Sicilian Lemon Balsamic Vinegar*

1/2 teaspoon vanilla

24 small frozen phyllo cups

12 fresh strawberries, halved (or other fruit)

In a small bowl, mix together the yogurt, balsamic vinegar and vanilla.  Spoon it into the phyllo cups.  Top with a strawberry half.  Serve immediately or cover and refrigerate for later use.

*You can substitute many of our white balsamic vinegars if you wish.  Key Lime and Peach are two of our favorites.
