Lemon Berry Phyllo Cups
This is a super easy spur-of-the-moment dessert. Have the kids help for even more fun.
1 cup vanilla or plain Greek style yogurt (we use Fage)
3-4 tablespoons Sicilian Lemon Balsamic Vinegar*
1/2 teaspoon vanilla extract
24 small frozen phyllo cups
12 fresh strawberries, halved (or other fruit)
In a small bowl, mix together the yogurt, balsamic vinegar and vanilla. Spoon it into the phyllo cups. Top with a strawberry half. Serve immediately or cover and refrigerate for later use.
*You can substitute many of our white balsamic vinegars if you wish. Key Lime and Peach are two of our favorites. You can also vary the fruit like mandarin orange, blueberries or raspberries.
