lemony Leeks & Feta
The mellow savoriness of leeks is beautiful in this dish.
3 medium leeks
3 tablespoons Lemon Olive Oil, divided
Salt and Pepper
About 1/2 cup crumbled feta
Cut off the root end and the dark green tops of the leeks. Slice in half lengthwise and rinse thoroughly under running water to remove any sand or debris. Drain on paper towels.
When ready to grill (or broil), drizzle about 2 tablespoons of the oil over the cut side of the leeks. Add salt and pepper. Place the leeks cut side down on grill grates (or cut side up on a heat-proof dish if broiling). Grill about 3-4 minutes or until nice char marks appear. Turn over and cook another 3 minutes.
To serve, place the leeks, cut side up, on a serving plate and sprinkle with the feta cheese. Drizzle another tablespoon of the oil on top.
