The addition of a little dressing takes watermelon to new heights.
2 tablespoons Persian Lime Olive Oil
2 tablespoons Honey Ginger Balsamic Vinegar
Cut watermelon in chunks and place in a bowl. Combine the oil and vinegar in a small jar and shake. Pour as much as you want over the watermelon.
Sprinkle with finely sliced mint if you wish.
Chill and serve.
