Rice
Lebanese Rice (a-roni)

This dish is much healthier than store-bought Rice-a-Roni and you can control the ingredients.  It's very easy.

 

2 tablespoons Butter Olive Oil

1/4 cup orzo

1 cup white short or long grain rice

2 cups low-sodium chicken or vegetable broth

1 teaspoon salt, or more to taste

Rinse the rice several times in cold water until the water is no longer cloudy; drain well.

In a medium pot, heat the Butter Olive Oil.  Add the orzo and toast until golden, stirring frequently.  Stir in the rice and saute until the rice is well coated with the oil.  Add the broth and salt.  Reduce the heat to low, cover and simmer for 15 minutes or until the rice is tender and the water is absorbed.

Take the pot off the heat, fluff with a fork and taste for salt.  Cover again for 5 more minutes.  Fluff with a fork.

Serve.

Note:  You can add herbs, cheese or other items to make this recipe your own.  I add other ingredients when the rice is cooked; stir in and cover for the 5 minute waiting period.
