Orange Chipotle Salmon
Michelle in our PCB store made this tasty dish and she did a great job. It hits all the right notes.
1 Coho or other good quality salmon fillet (we used a frozen Greenwise fillet from Publix)
1 tablespoon orange juice
1 ½ teaspoon orange zest
1 tablespoon Chipotle Olive Oil
1 ½ teaspoon orange blossom honey or other honey
¼ teaspoon ground cumin
Salt & pepper
Slices of orange
Mix all ingredients through cumin in a small bowl or measuring cup. Put salmon on a plate and pour on the marinade, coating both sides. Let sit for 30 minutes.
Before placing fish on the grill, salt and pepper fillets to taste and then top with orange slices. Grill on medium or 325 degrees for approximately 20-30 minutes or until done to your liking.
(On the Traeger, I left the lid down for the full 30 minutes before looking at it. It needed another 10 minutes for it to be a little more dry.)
* Alternatively, you can use Blood Orange Olive Oil instead of the Chipotle, omit the orange zest and add ¼ tsp of chipotle chili powder.
