Red Wite Blue Salad
Patriotic Fruit Salad

We didn't think of the fruit combination, but our vinegars make this salad all our own.  We love it.


3 cups halved strawberries (quarter, if large)

2 cups blueberries

1 medium jicama

3-4 tablespoons Blenheim Apricot, Cranberry Pear or Pomegranate Quince Balsamic Vinegar

Finely sliced basil or mint leaves for decoration (optional)

Peel the jicama and slice it in scant 1/4" slices.  Cut shapes with mini cookie cutters.

Combine the berries and jicama in a bowl.  Drizzle on the vinegar and toss.  Sprinkle with herbs, if using.  Chill until ready to serve.
