Perfect Autumn Salad

8 cups salad greens

1 small can mandarin oranges, drained,

   reserving 1 tablespoon

4 oz. feta cheese, crumbled

1/2 small sweet onion, sliced vertically into strips

1/4 cup dried cranberries (optional)

2 slices cooked bacon, chopped, or 1/2 cup toasted pecans

3 tablespoons Blood Orange Olive Oil

3 tablespoons Cinnamon Pear Balsamic Vinegar

Pinch of salt and pepper

Combine the oil, vinegar and 1 tablespoon reserved mandarin orange juice in a small container and shake vigorously. 

 

Place remaining ingredients in a serving bowl.  Drizzle on as much dressing as you'd like and toss.

*You can use other oils and vinegars in the is salad, too.  And the dressing is even good for bread dipping with a nice rustic loaf of bread.
