From the Barbary Coast of North Africa, Tunisian Baklouti peppers are rare and unique, resulting in a fruity, spicy green chili olive oil. The flavor is similar to a hot jalapeno pepper. It is made by combining one pound of organic extra virgin olive oil with 1.6 pounds of fresh whole green Baklouti chilies. The two ingredients are then crushed together. Baklouti oil adds a new and surprising dimension to salsas of all stripes and to meat, fish and poultry dishes.
