Our Caribbean Jerk Seasoning is a wonderfully flavorful conbination of garlic, thyme, allspice, raw brown sugar, cloves, nutmeg, cinnamon and cayenne pepper. This recipe is has the taste of the West Indies. It's moderately hot, but not killer. It's perfect on any kind of protein -- meats, pork, poultry, seafood and fish. Try it as a rub on ribs or sprinkle a little on sweet potatoes or corn on the cob. It's our favorite rub on a Thanksgiving turkey. Rub 1/4 bottle under the skin and anoather 1/4 bottle on the outside for the perfect flavorful bird.
And for a surprisingly delicious appetizer, combine 1 cup sour cream, 1 cup mayonnaise and 1 cup drained crushed pineapple in a serving dish. SPRINKLE THE TOP with 2-3 tablespoons of the Jerk Seasoning. Do not stir the seasoning mix into the dip -- the flavor disappears. When the seasoning is on top, it tastes great. Serve with crackers such as Townhouse.
