Baked Parmesan Tomatoes

Thanks to our customer, Beth, for the recipe!  I've tried it and it's really good.  The tomato flavor condenses, making it super-good.


4 large-ish ripe tomatoes

1/2 cup Unflavored Olive Oil

1/2 cup Grapefruit Balsamic Vinegar

Salt and freshly ground pepper to taste

3/4 cup freshly grated Parmesan cheese

Preheat oven to 400 degrees.

Core and slice the tomatoes in 3/8-inch slices.  Drizzle half of the olive oil and vinegar in a large baking sheet.  Add the tomatoes in a single layer.  Top with the remaining oils and vinegar.  Sprinkle with salt and pepper.  Bake for about 20 minutes or until the tomatoes have drawn in a bit.

Remove from the oven and sprinkle with the Parmesan and let it melt a bit.  Add a little more black pepper if you wish.  Serve.
