Goat Cheese Rosemary
Goat Cheese with Rosemary, Apricots, Cranberries & Pistachios

This is just really, really, really good.

 

8 oz. goat cheese

2-3 tablespoons Rosemary Olive Oil

3-4 tablespoons dried cranberries

7 dried apricots, diced

1/4 cup chopped pistachios

Crackers

Preheat oven to 350 degrees.  Cut goat cheese in chunks or slices and place in an oven-proof serving dish.  Drizzle with 2 tablespoons of the olive oil.  Bake until heated through, about 5-8 minutes.  Sprinkled with the dried fruit, nuts, and another drizzle of olive oil. 

 

Serve with crackers.
