Salisbury Steak
Salisbury Steak

My sister's cooking style is very different from mine but always, always delcious.  This is her recipe, which I'm happy to steal.  Got any more, Es?

1 small onion, finely chopped

5 tablespoons Wild Mushroom & Sage Olive Oil, divided

1 lb. lean ground beef

1 tablespoon Worchester sauce (or Neapolitan Herb Balsamic)

1 tablespoon Steakhouse Seasoning or your favorite steak seasoning

2 tablespoons butter (or Butter Olive Oil)

2 cups sliced mushrooms

Salt and pepper

2 tablespoons flour

1 3/4 cup beef broth

In a large skillet, saute the onion in 1 tablespoon Wild Mushroom & Sage Olive Oil for 2-3 minutes.  Set aside.

In a bowl, combine the onions, ground beef, Worchester sauce, and Steakhouse Seasoning.  Form into four patties.  Saute the patties in 3 tablespoons of the Mushroom & sage oil about 4 minutes.  Remove to a plate.

Add 1 tablespoon Mushroom & sage oil and the butter to the skillet and saute the mushrooms 3-5 minutes.  Add salt and pepper.  Sprinkle with the flour and cook 2 minutes.  Add the beef broth and simmer until thickened, about 5-7 minutes.  Return the patties to the sauce and heat through.  Taste to see if you need to adjust salt and pepper.

Keep warm while making garlic mashed potatoes, rice or pasta.

Serves 4.

Thanks, Es, for the great recipe.
