Serrano Honey Chicken Stir-Fry
This is so much better than dishes you'll get at most Chinese restaurants. And it's quick to make.
1 cup uncooked brown or white rice
3 tablespoons Garlic Olive Oil, divided
1 3/4 cup water or chicken broth
1/2 cup Serrano Honey Vinegar
2 medium chicken breasts, cut into 1 inch cubes
1 red bell pepper, cut into 1 inch cubes
1/2 lb. mushrooms, quartered
1 broccoli crown, cut into florettes
2 cloves garlic, minced
Heat 1 tablespoon Garlic Olive Oil in a small saucepan on medium heat. Pour rice into the pan and saute rice until translucent (about 3 minutes). Add the liquid and cover. Cook white rice for about 20 minutes; cook brown rice 40-45 minutes until tender. Remove from heat and let rest until the remainder fo the dish is ready.
Saute chicken in 2 tablespoons of the oil until done and set aside in a bowl. Add the onion and bell pepper to the pan and saute 2 minutes, then add the broccoli and continue to cook for another minute or 2 until crisp tender. Return the cooked chicken back to the pan and add the vinegar. Cook, stirring, until all the ingredients are coated and the chicken is heated.
Serve over the rice or chow mein noodles.
