Sloppy Joe
Champagne Sloppy Joes

I've been trying to recreate the Sloppy Joes I had in elementary school, and I finally think I have it right.  These are beautifully sweet and tangy.  And juicy to boot!

2 tablespoons Unflavored or Madagascar Black Peppercorn Olive Oil

1 lb. ground beef (I prefer the 90% lean type)

1 medium onion, finely chopped

1/2 green bell pepper, finely chopped

2 cloves garlic, minced

1 tablespoon tomato paste

1/2 cup ketchup

1/3 cup water

1 tablespoon brown sugar

1 1/2 tablespoon Champagne Dark Balsamic Vinegar

2 teaspoons mustard of your choice

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes

4 burger buns

Cole slaw (optional)

In a large skillet, heat the olive oil over medium high heat.  Add the beef and break apart with a spoon.  Add the onion, bell pepper and garlic.  Cook 5 minutes, mixing occasionally.

Add the remaining ingredients through the crushed red pepper flakes.  Let simmer about 10 minutes until some of the moisture has evaporated.  It should be juicy but not sopping wet.

Serve on burger buns, and add some cole slaw if you wish.
