Steak with Garlic Chips and Cannellini Beans
Steak
3-4 tablespoons Butter Olive Oil, divided
Salt
Freshly ground black pepper
6 cloves garlic, very thinly sliced
1 15-oz. can cannellini beans, rinsed and drained
Minced parsley or basil (optional but good)
Rub the steaks with 1-2 tablespoons of the oil. Salt and pepper the steak well. Pan fry the steaks on medium in a dry pan 3 minutes per side for small steaks; 4 minutes per side for larger ones, or to desired doneness. Remove the pan from the heat and set aside the steaks; cover with foil to keep warm.
Return the pan to the heat and add 2 tablespoons of Butter olive oil. Quickly saute the garlic slices until light golden brown. Spoon out the garlic onto a paper towel to cool, leaving the oil in the pan.
Return the pan to the heat and add the beans. Saute until the beans start to take on a bit of color, about 3-4 minutes. Place on the pan next to the steaks. Top the dish with the garlic chips and herbs. Serve.
* Be sure not to overcook the garlic slices because they'll become bitter. This dish is also great with garlic mashed potatoes or roasted root vegetablesa
