Strawberry Lime Muffins
So easy and so special.
1 pkg. Betty Crocker Lemon Poppyseed Muffin Mix
4 tablespoons Persian Lime Olive Oil
1/4 cup water
1 1/2 cups strawberries, diced
1-2 tablespoons sugar (optional)
Make muffin mix using the directions on the package, substituting the Persian Lime Olive Oil for the vegetable oil. Add the strawberries. If they're not very sweet, add a little sugar as well. Stir gently and then follow the baking directions on the package.
* You could also use Lemon, Blood Orange or Unflavored Oil in this recipe. You can also use these oils in other cakes that call for vegetable oil.
