Savory Strawberry Mozzarella Bruschetta

1 French baguette, thinly sliced

8 oz. fresh mozzarella, sliced

1 pint strawberries, sliced

1/4 cup Serrano Honey Vinegar

3 tablespoons Tuscan Herb, Rosemary or Unflavored Olive Oil, divided

Freshly ground pepper

Place the sliced strawberries in a bowl and toss with the Serrano Honey Vinegar.  Let sit for 30 minutes, tossing occasionally.

Brush the baguette rounds with olive oil.  Toast the rounds on a sheet pan at 350 degrees until lightly browned.  Remove from the oven.  When ready to serve, place a slice of mozzarella on each round.  Drain the strawberries and place on top of the mozzarella.  Top with some freshly ground black pepper.

* This makes a lovely slightly sweet-savory light appetizer.
