Savory Strawberry Mozzarella Bruschetta

Our dear former employee, Connie, came up with this dish, and we applaud her.  Most strawberry dishes are overly sweet, but using the savory Serrano Honey Vinegar gives them a little tasty kick of flavor.  Delish.

 

1 French baguette, thinly sliced

8 oz. fresh mozzarella, sliced

1 pint strawberries, sliced

1/4 cup Serrano Honey Vinegar

3 tablespoons Tuscan Herb, Rosemary or Unflavored Olive Oil, divided

Freshly ground pepper

Place the sliced strawberries in a bowl and toss with the Serrano Honey Vinegar.  Let sit for 30 minutes, tossing occasionally.

Brush the baguette rounds with olive oil.  Toast the rounds on a sheet pan at 350 degrees until lightly browned.  Remove from the oven.  When ready to serve, place a slice of mozzarella on each round.  Drain the strawberries and place on top of the mozzarella.  Top with some freshly ground black pepper.

* This makes a lovely slightly sweet and savory light appetizer.
