Summer Hash
Summer Vegetable Hash

My garden gave me beautiful summer squash and tomatoes, so I tossed this dish together one night.  It's a winner.

 

3 tablespoons Unflavored or House Blend Olive Oil

1/2 cup thinly sliced red or yellow onion

1 pint small-ish cherry tomatoes

2 medium summer squash or zucchini

2 cups corn kernels or kernels cut from the cob

1/2 teaspoon fresh thyme

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup crumbled feta

In a large skillet, heat the oil on medium heat, and add the onion.  Saute for about 5 minutes until softened.

Add the tomatoes and saute about 3 minutes.  Add the summer squash and saute until the cherry tomatoes are softened and a couple begin to burst.  Add the seasonings and continue to cook another minute or so.

Remove from the heat and sprinkle with the feta.  Serve.
