Surprise Quinoa Salad

The surprise is that I found all these ingredients in my kitchen when I had unexpected company arrive, and when I was done, I was surprised at how good it was.  Use what you find at your house and just add the oils and vinegar.


1 cup dry quinoa

1 can black beans, rinsed and drained

2 cup corn kernels (mine were frozen, then thawed)

1 orange bell pepper, chopped

2-3 tablespoons chopped onion

4 cups spinach, chopped

3 oz. crumbled feta

1 teaspoon finely chopped sundried tomatoes

2 tablespoon Basil (or other) Olive Oil

3 tablespoons Cascadian Wild Raspberry Balsamic Vinegar

Salt to taste

Cook the quinoa per package directions and cool.  Combine everything together.  Serve.

Makes 8-10 servings

*I highly recommend the Cascadian Wild Raspberry and Blenheim Apricot vinegars.  They're two-thumbs-up.

Other ingredient alternatives would be other kinds of beans, edamame, cucumber, cherry tomatoes, celery, shredded carrots, shredded cheddar cheese or queso fresco.
