Sweet Spicy Shrimp Tacos
Sweet and spicy are perfect with shrimp and these shrimp tacos are really tasting with our sweet tart Key Lime Balsamic Vinegar. You can also use scallops or white fish in this recipe.
1 lb. peeled and deveined shrimp
1 teaspon chipotle in adobo sauce*
2 teaspoons honey
1 1/2 tablespoons Key Lime Balsamic Vinegar or lime juice
1/8 teaspoon ground cumin
2 tablespoons Unflavored Olive Oil
Scant 1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups finely sliced regular or napa cabbage
2 tablespoons mayonnaise
2 tablespoons Pineapple or Key Lime Balsamic Vinegar
1/2 teaspoons celery seeds
Pinch of salt and pepper
Combine the Pineapple Slaw ingredients and chill.
Combine all of the shrimp recipe ingredients and marinate 20 minutes. Heat a skillet over medium high heat and add the shrimp and marinade to the pan. Cook the shrimp about 2 minutes on one side and 1-2 minutes on the second side or just until opaque.
Serve in warm corn tortilla shells with pineapple slaw, tomatoes, cilantro, and a squeeze of llime and our Sriracha Horseradish Sauce.
* Chipotles in adobo are quite hot so you only need a little at a time. Not to worry, you can mash up the leftovers and freeze them in a freezer bag and just break off the amount you need for other recipes.
