Tuscan Toast & Eggs

2 slices of good whole wheat bread
4-5 tablespoons Tuscan Herb Olive Oil
2 eggs
Salt and pepper to taste
Roasted red pepper strips (optional)

In a medium skillet, heat 3 tablespoons of Tuscan Herb Olive Oil over medium heat. Add the bread and toast on both sides until golden brown. Remove from the skillet and keep warm.

Add another tablespoon or two of oil to the skillet and crack the eggs into the pan. Season with salt and pepper. Cook until the eggs yolks just begin to set. Place on the toast. Top with the red pepper strips.

Serve with fresh fruit.

Serves 1.
