Whole Fish with Green Sauce

This is a clever and tasty way to serve a whole fish.  The orange gives is a slight sweetness that is flavorful and unexpected.


1 whole 3-3.5 lb. fish such as snapper, cleaned

1/2 cup fresh cilantro leaves

1/2 cup fresh mint leaves

1 clove garlic, grated

2 teaspoons orange rind

2 tablespoons orange juice

3 tablespoons Unflavored Extra Virgin Olive Oil

Preheat oven to 400 degrees. Place a sheet of parchment or foil on a baking sheet. Cut 4-5 deep slits almost to the bone on each side of the fish. Wad up a piece of foil into a ball with a flat bottom. You may need to increase the size of the slit in the fish to make sure it will stand up on it's belly. Before filling, check to make sure it stands and then remove the foil.


Place all the remaining ingredients in a food processor and blend into a slightly chunky paste. Set half of this sauce aside.


Rub half of the sauce into the slits and inside the fish. Stand the fish on it's foil stand on the baking sheet. Bake 12-14 minutes until the eyes are opaque and the fish flakes.


Serve with the reserved sauce.
